300g Pumpkin in small cubes
2 Shallots
Olive Oil
300g of Ronaldo Rice Crafters
5 cl of White Wine
1 l of Vegetable stock
4 slices of “Queijo da Serra” Cheese or other mature sheep’s Cheese
Pepper
Sage

Pumpkin rice, portuguese cheese “Queijo da Serra” and balsamic vinegar

Sauté the pumpkin and chopped shallots in a little olive oil.

Add the rice, fry for a few seconds and pour the wine.

When it is evaporated, pour the broth until the rice is cooked. Turn the oven on at 180º.

Divide the rice by the plates, place on top a slice of cheese and take a few moments to the oven until it melts a little.

Sprinkle with sage, a little pepper and serve.
