Apple Rice, Qj. Brie and Bacon

  • 2 unpeeled apples
  • one onion
  • olive oil
  • 300 g Ronaldo rice
  • 50 cl of white wine
  • 8 slices of bacon
  • 1 l vegetable stock
  • 300 g Brie cheese
  • pepper
  • chives

Peel an apple, cut it into small cubes and sauté them in a little olive oil along with the onion. Pour in the rice, fry for a few seconds, add the wine, let it evaporate and gradually add the stock as it is absorbed by the rice. Meanwhile, turn the oven on to 200º. Line the baking tray with aluminum foil, place a rack with the bacon slices on top and bake until toasted. Heat a non-stick frying pan with a drizzle of olive oil and sauté the other apple cut into wedges. Just before the rice is ready, add 100g of Brie cheese in small pieces and stir until melted. Distribute the rice among the plates, place a slice of cheese, the bacon and the sautéed apple slices on top, sprinkle with chives and pepper and serve.
